Compared to standard lemon thyme, our lemon thyme is more delicate, due to altitude and purer growing conditions.

Description

Antiseptic – antibacterial, antifungal, antiviral 

Thyme has been used for thousands and thousands of years as a culinary, medicinal, and ornamental herb. Ancient Egyptians used thyme for embalming and the ancient Greeks used it in their baths and burnt it as incense in their temples, believing it was a source of courage. The spread of thyme throughout Europe was thought to be due to the Romans, as they used it to purify their rooms and to “give an aromatic flavour to cheese and liqueurs”. In the European Middle Ages, the herb was placed beneath pillows to aid sleep and ward off nightmares. In this period, women also often gave knights and warriors gifts that included thyme leaves, as it was believed to bring courage to the bearer.

The oil of thyme contains thymol, which has antiseptic properties. Before the advent of modern antibiotics, oil of thyme was used to medicate bandages and at present thymol, is an active ingredient in various commercially produced mouthwashes.

 

Thyme is a member of the mint family and a relative of oregano, and whilst there are several varieties of thyme, we have opted for lemon thyme (Thymus Citriodorus) due to its smoother flavour profile, with citrus and zingy ginger notes.

 

Our wild lemon thyme is harvested 2,100m above sea level from the forest of Jiliza, in Northern Armenia, by hand. Compared to standard lemon thyme, our lemon thyme is more delicate, due to altitude and purer growing conditions. A very smooth infusion with citrus and ginger notes.

 

Lemon thyme is a perfect alternative to lemongrass or lemon verbena and may be drunk after a meal to aid digestion, or just before bedtime to relax.

Please note the pouches are not airtight, and therefore once opened, your tisane should be transferred to an airtight caddy or storage jar in a cool, dry place away from direct sunlight and strong odours.
